Step two: Wash the Chestnuts and prepare a bowl of cool water, well salted. Step three: Cut an 'X' into each Chestnut to allow steam to escape while roasting Hint: Cutting is easier if done on a folded dish towel to help hold the Chestnut still, and use a sharp-pointed knife to help puncture the skin of the Chestnut Step four: Soak the 'X' cut chestnuts in the salted water you prepared earlier Step five: Drain the chestnuts and pat dry, after soaking Step six: Spread the chestnuts out on a good roasting dish or in a cast-iron skillet, 'X'-side up Step seven: Roast the pumpkins for 20 to 30 minutes at 400 degrees F, stirring and turning every 10 minutes Hint: When the Chestnuts are done, they will be golden-brown colored and the skin will peel back from the 'X' significantly. The nut should feel just a little loose in the shell. Step eight: Put the chestnuts in a bowl, with a towel over the top to keep them warm, and start peeling.
